We believe that a gin should be better than the sum of its parts, and we ensure that each individual component is the finest that we can source — focusing on only sourcing from ethical, sustainable producers. We only ever use soil association certified organic grain spirit from EU farms, and we carefully vet our botanical suppliers to ensure that they meet our strict standards.
There are myriad excellent gins out there. We’re aware of that. What we seek to do is to make the rare, the eccentric, and the luxurious available for everyone, at a sensible price point.
We’ve done a vast amount of exploration, seeking forgotten ingredients and production methods to make a spirit that sparks your curiosity. We make spirits that you can talk about, that you can think about, and most importantly — one that you can savour.
Taste is far more than a simple sensation upon the tongue, it’s multi-sensory. Scent and taste evoke and form incredibly vivid memories; we’re keen to transport you to places that only a truly great drink can take you.
A key note within our gin is Australian Sandalwood (Santalum Spicatum – hence Santal), the sandalwood that we use is wild harvested from sustainable sources, and was traditionally distilled. It provides a woody, milky mid to base note that is incredibly distinctive. We love sandalwood, and its application in the perfume industry. We also think that its distinctive flavour is shamefully underutilised. All of our other notes are built around the sandalwood base
